Ingredients:
For the cake:
- 1 box of white cake mix (or homemade white cake)
- 1 package (3 oz) strawberry Jell-O
- 3 large eggs
- 1 cup water
- ½ cup vegetable oil
- 1 teaspoon vanilla extract
- 1 cup fresh strawberries, finely chopped
For the frosting:
- 1 package (8 oz) cream cheese, softened
- 1 cup powdered sugar
- 2 cups heavy whipping cream
- 1 teaspoon vanilla extract
For the topping:
- 1 cup fresh strawberries, sliced
- ¼ cup strawberry jam (optional)
Directions:
- Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a large bowl, prepare the cake batter according to the instructions on the box, adding the strawberry Jell-O powder, eggs, water, oil, and vanilla extract. Mix until smooth. Fold in the finely chopped fresh strawberries.
- Pour the batter evenly into the prepared cake pans. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Allow the cakes to cool in the pans for 10 minutes, then turn out onto a wire rack to cool completely.
- For the frosting, beat the softened cream cheese and powdered sugar together in a medium bowl until smooth. In a separate bowl, whip the heavy cream and vanilla extract until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until smooth and fluffy.
- Once the cakes are completely cool, frost the top of one layer with the frosting. Place the second layer of cake on top and frost the top and sides of the entire cake.
- For the topping, arrange the fresh strawberry slices on top of the cake. For added sweetness, drizzle with strawberry jam, if desired.
- Chill the cake in the refrigerator for 1-2 hours before serving for best results.
