Ingredients:
- 2 cups all-purpose flour
- 2 cups granulated sugar
- 1 cup vegetable oil
- 4 large eggs
- 2 cups grated carrots
- 1/2 cup crushed pineapple, drained
- 1 cup chopped walnuts
- 2 teaspoons baking powder
- 2 teaspoons baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
Instructions:
- Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
- In a large bowl, mix flour, sugar, baking powder, baking soda, cinnamon, and salt.
- In another bowl, whisk together oil, eggs, grated carrots, crushed pineapple, and vanilla extract.
- Combine the wet and dry ingredients. Stir in chopped walnuts.
- Divide the batter evenly into the prepared pans.
- Bake for 25-30 minutes or until a toothpick comes out clean. Cool in pans for 10 minutes, then transfer to wire racks to cool completely.
Notes:
Feel free to add raisins or swap walnuts for pecans for a different texture.
