Ingredients:
- 4 large Portobello mushrooms
- 1 cup fresh spinach, chopped
- 1/2 cup cream cheese
- 1/4 cup shredded mozzarella cheese
- 2 tbsp grated Parmesan cheese
- 2 cloves garlic, minced
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions:
- Preheat oven to 375°F (190°C). Clean and remove the stems from the mushrooms.
- In a pan, heat olive oil and sauté garlic until fragrant. Add spinach and cook until wilted.
- Remove from heat and mix in cream cheese, mozzarella, and Parmesan.
- Stuff each mushroom with the spinach-cheese mixture.
- Place the mushrooms on a baking sheet and bake for 15-20 minutes until the tops are golden and bubbly.
- Serve hot and enjoy!
