Ingredients:
1 lb chicken breast, cubed
1/2 cup cornstarch
2 eggs, beaten
1/4 cup vegetable oil
Salt and pepper to taste
For the Sweet & Sour Sauce:
1/2 cup sugar
1/4 cup ketchup
1/4 cup white vinegar
1 tablespoon soy sauce
1 teaspoon garlic powder
1/2 cup pineapple chunks
Instructions:
Preheat oven to 325°F (165°C). Season chicken with salt and pepper, coat with cornstarch, and dip in beaten eggs.
Heat oil in a pan and lightly brown the chicken on all sides, then transfer to a baking dish.
Mix sugar, ketchup, vinegar, soy sauce, and garlic powder to make the sweet and sour sauce. Pour over the chicken.
Bake for 60 minutes, stirring halfway through to coat the chicken in the sauce.
Add pineapple chunks in the last 10 minutes.
