Classic Southern Caramel Cake



This cake is the epitome of the Southern dessert: layers of soft, moist vanilla sponge cake, topped with a butterscotch frosting that will make you sigh. Perfect for any special occasion!

Ingredients

For the cake:

• 2 1/2 cups of flour
• 2 1/2 tsp baking powder
• 1/2 tsp baking soda
• 1/2 tsp salt
• 1/2 cup butter (softened)
• 1 1/2 cups of sugar
• 3 large eggs
• 1 cup buttermilk
• 2 tsp vanilla extract

For the caramel frosting:

• 1 cup of butter
• 1 cup of brown sugar
• 1/2 cup heavy cream
• 1/4 cup light corn syrup
• 1/2 tsp vanilla extract
• A pinch of salt
Instructions

Prepare the Cake: Preheat the oven to 350°F (175°C) and grease three 8-inch pans. Beat the butter with the sugar until fluffy. Add the eggs and vanilla, then beat in the flour mixture alternating with the buttermilk.

Perfect Baking: Divide the dough between the molds and bake for 25-30 minutes. Let cool completely before frosting.

Caramel Frosting: Melt the butter in a saucepan, add the brown sugar, cream and corn syrup. Cook over low heat until thickened, then remove from heat and add vanilla and salt. Let cool.

Assemble and Decorate: Place a layer of cake, cover with caramel frosting, repeat with the other layers. Cover the entire cake with the remaining frosting and let it set before serving.
