Baked Spinach Mushroom Quesadillas

Enjoy a savory treat with these Baked Spinach Mushroom Quesadillas! Loaded with gooey cheese, fresh spinach, and tender mushrooms, these quesadillas are perfect for a quick and satisfying meal.

Ingredients:

4 tortillas (8 inch)
Olive oil (optional, enough to lightly coat the tortillas)
1 cup shredded mozzarella
1 cup shredded cheddar
3 cups roughly chopped spinach
8 ounces sliced mushrooms
Directions:

1️⃣ Preheat Oven:

Preheat the oven to 400°F (200°C).
2️⃣ Prepare Mushrooms:

Place the mushrooms in a microwave-safe bowl and microwave for 2 ½ to 3 minutes to soften. Drain and set aside.
3️⃣ Prepare Tortillas:

Lightly brush one side of each tortilla with olive oil (optional) and place on a baking sheet, oiled side down.
4️⃣ Assemble Quesadillas:

Distribute about half of the shredded mozzarella and cheddar over one half of each tortilla.
Layer with chopped spinach and softened mushrooms.
Sprinkle the remaining cheese on top, then fold the other half of the tortilla over the filling. Optionally, garnish with extra mushrooms and cheese.
