Ingredients:

1 ½ pounds pork belly – cut into 1×1 or 1×2-inch cubes
⅓ cup dark soy sauce
½ cup vinegar
1 cup water
10-12 pieces peppercorn
3 pieces bay leaves
1 teaspoon brown sugar – optional
1 big onion – chopped coarsely
2 tablespoons oil
5 cloves garlic – minced
Instructions:

In a large skillet over medium heat, sauté the garlic and onions in oil until fragrant and onions are translucent.
Add the pork belly cubes and cook until browned on all sides.
Pour in the soy sauce, vinegar, and water. Add the peppercorns, bay leaves, and brown sugar if using. Stir to combine.
Bring the mixture to a boil, then reduce heat to low and simmer uncovered for about 45 minutes to 1 hour or until the pork is tender and the sauce has thickened.
Serve hot with steamed rice and enjoy!
