Ingredients:
500g butter
6 cups flour
1 cup sugar
1 cup fine desiccated coconut (optional)
6 tsp baking powder
1 tsp salt
2 tsp vanilla essence
6 eggs
Jam of your choice
Method :
Cream butter and sugar, add eggs, vanilla essence and mix well. Sift dry ingredients into creamed mixture and mix everything with your hands.
Take 1 1/2 cups of dough and put it in a freezer for 30 minutes.
Press the rest of the dough into a swiss roll baking tray. Spread over the (apricot) jam.
Now grate the dough from the freezer over the apricot jam.
Bake in a preheated oven: 180°C for 20 minutes until its golden brown.
Cut into squares when it comes out of the oven and still warm. Let it cool down in the tray before you take it out gently with an egg lifter.
