1/2 cup pureed strawberries
1 tablespoon cornstarch
Chocolate Ganache:
1 cup heavy cream
8 oz dark chocolate, chopped
Fresh Strawberries for Garnish:
Sliced strawberries for decorating
Directions:
Prepare the base and chocolate cheesecake layer: Preheat oven to 325°F (160°C). In a bowl, mix crushed chocolate wafer cookies and melted butter. Press this mixture into the bottom of a 9-inch springform pan and set aside. In a large bowl, beat together cream cheese, sugar, cocoa powder, eggs, vanilla, and sour cream until smooth. Pour over the prepared crust and bake for 40-45 minutes, until set. Allow to cool completely.
Prepare the strawberry cheesecake layer: In another large bowl, beat cream cheese and sugar until smooth. Add eggs, vanilla, strawberry puree, and cornstarch, mixing until combined. Pour over the cooled chocolate cheesecake layer in the same pan. Bake for 40-45 minutes, or until set. Let cool and refrigerate for at least 4 hours or overnight.
Prepare the ganache: Heat the heavy cream in a saucepan until it just begins to simmer. Remove from heat and pour over chopped dark chocolate in a heatproof bowl. Let sit for 5 minutes, then stir until smooth.
Assemble and garnish: Pour cooled ganache over the top of the cheesecake, allowing it to drip down the sides for a dramatic effect. Garnish with fresh strawberry slices on top before serving.
