Ingredients:

  • 4 large Portobello mushrooms
  • 1 cup fresh spinach, chopped
  • 1/2 cup cream cheese
  • 1/4 cup shredded mozzarella cheese
  • 2 tbsp grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions:

  1. Preheat oven to 375°F (190°C). Clean and remove the stems from the mushrooms.
  2. In a pan, heat olive oil and sauté garlic until fragrant. Add spinach and cook until wilted.
  3. Remove from heat and mix in cream cheese, mozzarella, and Parmesan.
  4. Stuff each mushroom with the spinach-cheese mixture.
  5. Place the mushrooms on a baking sheet and bake for 15-20 minutes until the tops are golden and bubbly.
  6. Serve hot and enjoy!
