Ingredients:
4 boneless, skinless chicken breasts, pounded to even thickness
1 cup all-purpose flour
2 eggs, beaten
2 cups breadcrumbs
1 cup grated Parmesan cheese
2 cups marinara sauce
1 cup mozzarella cheese, shredded
2 tablespoons olive oil
Salt and pepper to taste
Fresh basil, chopped for garnish
Directions:
Preheat your oven to 400°F (200°C).
Season the chicken breasts with salt and pepper.
Dredge each chicken breast in flour, dip in beaten eggs, and then coat with a mixture of breadcrumbs and Parmesan cheese.
Heat the olive oil in a large skillet over medium heat. Fry the chicken until golden on both sides, about 3-4 minutes per side.
Place the fried chicken in a baking dish, cover each breast with marinara sauce, and then top with mozzarella cheese.
Bake in the oven for 20-25 minutes, or until the cheese is bubbly and golden.
Garnish with chopped basil and serve hot.
