Decadent Mint Chocolate Chip Layer Cake



Ingredients:

For the chocolate cake:

2 cups all-purpose flour
2 cups granulated sugar
3/4 cup unsweetened cocoa powder
2 teaspoons baking powder
1 1/2 teaspoons baking soda
1 teaspoon salt
1 cup buttermilk, room temperature
1/2 cup vegetable oil
2 large eggs, room temperature
2 teaspoons vanilla extract
1 cup boiling water
For the mint chocolate chip frosting:

1 1/2 cups unsalted butter, room temperature
4 1/2 cups powdered sugar
1/4 cup heavy cream
1 1/2 teaspoons peppermint extract
Green food coloring (optional)
1 1/2 cups mini chocolate chips
For the chocolate ganache:

1 cup semisweet chocolate chips
1/2 cup heavy cream

Directions:

Preheat your oven to 350°F (175°C). Grease and flour three 8-inch round cake pans.
In a large bowl, combine the flour, sugar, cocoa powder, baking powder, baking soda, and salt. Add the buttermilk, vegetable oil, eggs, and vanilla extract. Mix until well combined. Stir in the boiling water until the batter is smooth.
Divide the batter evenly among the prepared cake pans. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean. Cool the cakes in the pans for 10 minutes, then transfer to a wire rack to cool completely.
For the frosting, beat the butter until creamy. Gradually add the powdered sugar, beating until combined. Add the heavy cream, peppermint extract, and green food coloring, if using. Beat until fluffy. Fold in the mini chocolate chips.
For the ganache, place the chocolate chips in a heatproof bowl. Heat the heavy cream until just boiling, then pour over the chocolate chips. Let sit for 5 minutes, then stir until smooth. Let cool slightly before using.
To assemble, place one cake layer on a serving plate. Spread a layer of frosting on top. Repeat with the remaining cake layers and frosting. Frost the outside of the cake with the remaining frosting. Drizzle the ganache over the top of the cake, letting it drip down the sides.
