2 tablespoons olive oil
4 cloves garlic, minced
1/2 cup grated Parmesan cheese
1/2 cup bread crumbs
1 teaspoon dried thyme
1 teaspoon dried oregano
1/2 teaspoon paprika
For the Cheesy Scalloped Potatoes:
2 pounds potatoes, peeled and thinly sliced
2 tablespoons butter
2 tablespoons all-purpose flour
1 cup milk
1 cup shredded cheddar cheese
Salt and pepper, to taste
Chopped fresh parsley, for garnish
Instructions:
Preheat the Oven:
Preheat the oven to 375°F (190°C).
Grease a baking dish with butter or non-stick spray.
Prepare the Pork Chops:
Season the pork chops with salt and pepper on both sides.
In a small bowl, mix together the minced garlic, grated Parmesan cheese, bread crumbs, dried thyme, dried oregano, and paprika.
Press the Parmesan mixture onto both sides of each pork chop, coating them evenly.
Cook the Pork Chops:
Heat the olive oil in a large skillet over medium-high heat.
Add the pork chops and cook for 3-4 minutes per side, or until golden brown.
Remove the pork chops from the skillet and transfer them to the prepared baking dish.
Prepare the Cheesy Scalloped Potatoes:
In the same skillet, melt the butter over medium heat.
Stir in the flour and cook for 1-2 minutes, until bubbly.
Gradually whisk in the milk, stirring constantly, until the mixture is smooth and thickened.
Remove from heat and stir in the shredded cheddar cheese until melted. Season with salt and pepper to taste.
Arrange the sliced potatoes in the prepared baking dish in an even layer.
Pour the cheese sauce over the potatoes, covering them evenly.
Bake:
Cover the baking dish with foil and bake in the preheated oven for 45 minutes.
Remove the foil and bake for an additional 15-20 minutes, or until the potatoes are tender and the top is golden brown.
Serve:
Remove from the oven and let it rest for a few minutes before serving.
Garnish with chopped fresh parsley.
