Ingredients:
For the Cake:
– 4 large eggs
– 3/4 cup granulated sugar
– 1 teaspoon vanilla extract
– 1 cup all-purpose flour
– 1/2 teaspoon baking powder
– 1/4 teaspoon salt
– 1/4 cup powdered sugar (for dusting)
For the Filling:
– 1 cup heavy cream
– 1/4 cup powdered sugar
– 1 teaspoon vanilla extract
– 1 cup fresh strawberries, diced
Instructions:
1. Preheat oven to 350°F (175°C). Line a 10×15-inch jelly roll pan with parchment paper.
2. In a large bowl, beat the eggs and granulated sugar with an electric mixer until thick and pale. Add vanilla extract and mix well.
3. In a separate bowl, whisk together flour, baking powder, and salt. Gradually fold the dry ingredients into the egg mixture until just combined.
4. Pour the batter into the prepared pan and spread evenly.
5. Bake for 10-12 minutes, or until the cake is golden and springs back when touched.
6. While the cake is baking, prepare a clean kitchen towel by dusting it with powdered sugar.
7. Once the cake is done, invert it onto the prepared towel and peel off the parchment paper. Roll the cake up with the towel while still warm. Let it cool completely.
8. In a large bowl, beat the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
9. Gently fold in the diced strawberries.
10. Unroll the cooled cake and spread the strawberry cream filling evenly over the surface.
11. Carefully roll the cake back up without the towel. Transfer to a serving plate.
12. Dust with additional powdered sugar if desired.
