Sweet and Crunchy Homemade Caramel Corn



Ingredients:

10 cups popped popcorn
1 cup unsalted butter
1 cup brown sugar, packed
1/2 cup light corn syrup
1 teaspoon vanilla extract
1/2 teaspoon baking soda
1/2 teaspoon salt

Instructions:

Preheat your oven to 250°F (120°C). Line a large baking sheet with parchment paper or a silicone baking mat.
Place the popped popcorn in a large bowl, removing any unpopped kernels.
In a medium saucepan, melt the butter over medium heat. Stir in the brown sugar and corn syrup. Bring the mixture to a boil, stirring constantly.
Once boiling, allow the mixture to boil for 5 minutes without stirring. Remove from heat and stir in the vanilla extract, baking soda, and salt. The mixture will bubble up.
Pour the caramel sauce over the popcorn and toss to coat evenly.
Spread the caramel-coated popcorn onto the prepared baking sheet in an even layer.
Bake in the preheated oven for 45 minutes, stirring every 15 minutes to ensure even coating.
Remove from the oven and let cool completely before breaking into pieces. Store in an airtight container.
