1 lb large shrimp, peeled and deveined
2 tbsp olive oil
4 tbsp unsalted butter
4 cloves garlic, minced
1 tsp Cajun seasoning
1/2 tsp paprika
1/2 tsp red pepper flakes (optional, for extra heat)
1/2 cup dry white wine or chicken broth
Juice of 1 lemon
1/4 cup chopped fresh parsley
Salt and pepper to taste
12 oz linguine or your favorite pasta
Lemon wedges, for serving
Instructions
Cook the Pasta:
In a large pot of boiling salted water, cook the pasta according to package instructions. Drain and set aside.
Cook the Shrimp:
In a large skillet, heat the olive oil over medium-high heat. Add the shrimp and cook for about 2-3 minutes on each side, or until they turn pink and opaque. Remove the shrimp from the skillet and set aside.
Prepare the Sauce:
In the same skillet, melt the butter over medium heat. Add the minced garlic, Cajun seasoning, paprika, and red pepper flakes. Cook, stirring frequently, for about 1 minute, or until the garlic is fragrant.
Add the Wine and Lemon Juice:
Pour in the white wine (or chicken broth) and lemon juice, stirring to combine. Let the mixture simmer for 2-3 minutes, allowing the flavors to meld and the sauce to slightly reduce.
Combine and Serve:
Return the cooked shrimp to the skillet and toss to coat them in the sauce. Add the cooked pasta and chopped parsley, tossing everything together until well combined and heated through. Season with salt and pepper to taste.
Serve the Cajun Shrimp Scampi with lemon wedges on the side for squeezing over the top.
