Ingredients:
- 1 lb beef stew meat, cubed
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups beef broth
- 2 cups water
- 1 can (14.5 oz) diced tomatoes
- 2 cups mixed vegetables (carrots, potatoes, green beans, corn)
- 1 teaspoon dried thyme
- Salt and pepper to taste
Instructions:
- Brown the Beef:
- Heat olive oil in a large pot. Add beef and brown on all sides. Remove and set aside.
- Cook the Aromatics:
- In the same pot, add onion and garlic. Sautรฉ until softened.
- Simmer the Soup:
- Return beef to the pot. Add beef broth, water, tomatoes, and thyme. Bring to a boil, then reduce to a simmer for 45 minutes.
