POTATO FRUITS

1kg (2 lbs) of boiled potatoes
2 yemas de huevo
1/2 teaspoon nutmeg
Salt and pepper to taste
100g (1 cup) grated parmesan
3 tablespoons of chopped parsley
2 huevos
Grated bread to cover
1 block mozzarella cheese
MÉTODO
Peel and make mashed potatoes.
Combine mashed potatoes with salt, pepper, nutmeg, egg yolks and Parmesan.
Slice cheese into rectangles.
Take a couple of tablespoons of mashed potatoes and form an empanada, wrap it around the cheese, making sure it’s completely covered.
Beat 2 eggs and cover each potato fritters with egg and grated bread.
Fry for 6-7 minutes or until evenly golden brown.
