2 cups all-purpose flour
1 cup granulated sugar
1 tablespoon baking powder
1/2 teaspoon salt
1/2 cup unsalted butter, melted
2 large eggs
1 cup milk
1 teaspoon vanilla extract
1 1/2 cups fresh or frozen cherries, pitted and chopped
1/2 cup cherry preserves
Directions:
Preheat the oven to 375°F (190°C). Line a muffin tin with paper liners.
In a large bowl, whisk together the flour, sugar, baking powder, and salt.
In another bowl, combine the melted butter, eggs, milk, and vanilla extract. Mix well.
Add the wet ingredients to the dry ingredients and stir until just combined.
Gently fold in the chopped cherries.
Fill each muffin cup halfway with batter. Add a teaspoon of cherry preserves to the center of each muffin, then top with more batter until the cups are 3/4 full.
Bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
Let the muffins cool in the tin for 10 minutes, then transfer to a wire rack to cool completely.
Drizzle with additional cherry preserves if desired.
