Chocolate Cake Recipe with Coconut Filling and Topping
Ingredients
For the cake:
• 2 cups all-purpose flour
• 2 cups of sugar
• 3/4 cup unsweetened cocoa powder
• 2 teaspoons baking powder
• 1 1/2 teaspoons baking soda
• 1 teaspoon salt
• 1 cup of milk
• 1/2 cup vegetable oil
• 2 eggs
• 2 teaspoons vanilla extract
• 1 cup of boiling water
For the filling and topping:
• 2 cups of coconut cream
• 1 cup butter (room temperature)
• 4 cups of powdered sugar
• 2 cups of grated coconut
Instructions
- Prepare the cake:
• Preheat the oven to 175°C (350°F). Grease and flour two round cake pans.
• In a large bowl, sift together the flour, sugar, cocoa powder, baking powder, baking soda and salt.
• Add milk, oil, eggs and vanilla extract. Mix on medium speed until well combined.
• Reduce the speed and add the boiling water little by little. The dough will be very liquid, but this is normal.
• Divide the batter between the prepared pans.
• Bake for 30 to 35 minutes, or until a toothpick inserted in the center comes out clean.
• Let the cakes cool in the pans for 10 minutes before transferring them to a wire rack to cool completely. - Prepare the filling and topping:
• In a large bowl, beat butter on medium speed until creamy.
• Reduce the speed and gradually add the icing sugar, beating well after each addition.
• Add the coconut cream and mix until light and fluffy.
• Add the grated coconut. - Assemble the cake:
• Place a layer of cake on a serving plate. Spread a generous layer of the coconut mixture over the cake.
• Place the second cake layer on top and repeat the process with more coconut mixture.
