Parmesan Baked Cod

Ingredients:
For the Cod:
¾ cup freshly grated Parmesan cheese
½ lemon (zest, plus juice)
2 tablespoons fresh parsley, chopped
½ teaspoon garlic powder
1¼ teaspoons paprika
3 tablespoons salted butter (use up to 5 tablespoons for extra butter sauce, optional)
1½ pounds fresh cod
Directions:
Preheat the oven to 400°F (200°C). Grease a rimmed baking sheet with cooking spray.
On a dinner plate, combine grated Parmesan cheese, garlic powder, and paprika.
Zest half of the lemon directly into the cheese mixture. Add the chopped parsley and toss everything with a fork to blend well.
Rinse the cod in cold water, checking for any bones. Pat dry with paper towels.
Melt the butter either in a small pan on the stove or in the microwave and set it aside.
Set up your coating station in the following order: fish, melted butter, cheese mixture, and prepared baking sheet.
Use a fork to dip each piece of fish first in butter, ensuring both sides are coated, then dredge in the cheese mixture, pressing gently to adhere.
Place the coated fish on the baking sheet and drizzle with any remaining butter.
Bake for about 15 minutes or until the fish flakes easily with a fork.
Squeeze fresh lemon juice over the baked cod before serving.
Serve with a side of bread for dipping in the extra garlic butter sauce, or spoon the sauce over rice, mashed potatoes, or polenta.
