Easy Oreo Crumble Cake

Ingredients:

1 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup unsalted butter, softened
1 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1 cup sour cream
1 cup crushed Oreo cookies
Whipped Cream Frosting:

1 cup heavy cream
1/4 cup powdered sugar
1 teaspoon vanilla extract
Garnish:

Whole Oreo cookies
Instructions:

Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
In a large bowl, whisk together the flour, baking powder, baking soda, and salt.
In another bowl, cream together the softened butter and sugar until light and fluffy. Beat in the eggs one at a a time, then stir in the vanilla extract.
Alternately add the sour cream and dry ingredients to the wet ingredients, mixing until just combined. Fold in the crushed Oreos.
Pour batter into the prepared pan and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
Let the cake cool completely before frosting.
To Make the Whipped Cream Frosting:

In a chilled bowl, whip the heavy cream until stiff peaks form.
Gradually add in the powdered sugar and vanilla extract, continue whipping until frosting reaches desired consistency.
To Assemble:

Frost the cooled cake with the whipped cream frosting.
Garnish with whole Oreo cookies.
Tips:

For a richer chocolate flavor, use dark cocoa powder in place of some of the all-purpose flour.
If you don’t have sour cream, you can make your own by adding 1 tablespoon of vinegar or lemon juice to 1 cup of milk and letting it sit for 5 minutes.
To store, cover the cake and refrigerate for up to 3 days. Enjoy!
